Microwave Delicious Gummy Oat Bars
Oat bars (“pancakes” if you’re British) are a great gummy breakfast or snack on the go, and these fruit-packed babies can be made in minutes using the microwave.
To make them you will need 1/2 cup butter, 5 tablespoons light brown sugar, 2 tablespoons golden syrup (you can find golden syrup at any UK grocery store, or substitute with equal parts honey and corn syrup mixture), 150 grams oatmeal (about 1 2/3 cups) and 50 grams each of golden raisins, candied cherries and dried apricots.
Microwave the butter, brown sugar, and syrup for a few minutes until melted and add the remaining ingredients. Put the whole thing in a greased dish, microwave it for four minutes, and let it cool. When they’re cool, slice them into delicious, sticky bars that are perfect for a light snack, whatever you call them.
