Use Diced Tomatoes for a Quick Umami Broth
If you need a savory broth but don’t have it on hand, use a tomato. Then prepare this quick umami-infused liquid for use in curries, soups, or any other recipe that requires broth.
To make a light, vibrant broth, replace the amount of broth the recipe requires with half the water and half the diced tomatoes. (Food 52 recommends fresh, but I think canned food is a last resort.) Dried tomatoes are also a great stock base. Just toss them in water, bring to a boil and let it brew for half an hour. You can strain them and use the steeping water like any broth, or mix them for a richer flavor.
