However, if you’re looking for a quick and easy way to cook a large piece of fish, Stafford suggests that you grab a cast iron skillet and grill it while it warms up. Once the temperature on the grill has risen, the pan will become very hot. Add a little oil, then carefully dip the fish fillets into the skillet and close the lid. Set the timer for three minutes, then reopen it. The fish will be perfectly cooked, it will have a nice crust on the bottom, and it should separate from the pan with a gentle push with a spatula. You will get a grilled smoke flavor without hazardous flames and sticking. You won’t get those gorgeous fish grilling marks, but it’s just for visual effect anyway.
