Perfectly Grill Fish in Three Minutes in a Cast Iron Skillet

As Alexandra Stafford of Food52 explains , fish is a delicate food, and that usually means you need to pay extra attention to your food preparation. However, if you’re looking for a quick and easy way to cook a large piece of fish, Stafford suggests that you grab a cast iron skillet and grill it while it warms up. Once the temperature on the grill has risen, the pan will become very hot. Add a little oil, then carefully dip the fish fillets into the skillet and close the lid. Set the timer for three minutes, then reopen it. The fish will be perfectly cooked, it will have a nice crust on the bottom, and it should separate from the pan with a gentle push with a spatula. You will get a grilled smoke flavor without hazardous flames and sticking. You won’t get those gorgeous fish grilling marks, but it’s just for visual effect anyway. Plus, if you use a gas grill, you won’t have any smoke smell unless you use smoking chips . Otherwise, this method is quite simple and effective.
