Cook and Freeze This Flavorful Trinity for a Quick and Easy Snack
You may have heard of sofritto , this fragrant trinity of oven-fried carrots, onions and celery that adds flavor and richness to whatever it decorates. You can fry a little sofritto whenever you need it, or you can borrow this trick from the Food 52 and store it in the freezer, ready for immediate use.
To do this, simply cut roughly equal parts of each vegetable and sauté the onions in a little olive oil or butter until they are translucent and smell divine. Add other vegetables and cook until golden brown or darker depending on your preference. Let the mixture cool, then roll it like a Tutsi roll on a piece of parchment paper. Place in a Ziploc bag and put everything in the freezer. Next time your dinner needs some extra energy, just slice off a little (or a lot) of this holy trinity and toss it into any sauce, stir-fry, soup, or any other dish that benefits from flavor (so that’s it).
