Make a Vanilla Muffin in a Toaster
The muffins are pretty good and the homemade muffins are even better, but sometimes you just need one muffin instead of twelve. For occasions like this, The Kitchn has come up with a simple cupcake recipe for one, and you don’t even have to break the cupcake pan.
Bonus: you probably already have all the ingredients. You will need butter, sugar, egg white, vanilla, self-rising flour ( you can make your own if you are not present), and some whole milk. Mix everything together and pour into a small muffin tin with two cupcake liners. Bake in a toaster (or conventional oven) at 350F for 18-20 minutes. Allow to cool and place a single serving of The Kitchn Glaze on top (see the recipe below).
