Spray the Bread Dough With Cooking Spray to Keep It Dry While Lifting

If you’ve ever made bread that has been aged or fermented for a long time, you may have noticed that a thick crust forms on top of the dough. This is unpleasant to shoot, but easy to prevent; you just need cooking spray.

A crust on a loaf of bread might not seem like a big deal, but it’s not the best option. The crust that forms during proofing or fermentation makes the process of shaping the loaf difficult, and it is almost impossible to separate the hardened part from the rest of the dough. To keep the bread dough nice and supple as it rises or ferments, all you need to do is quickly apply a little nonstick vegetable oil spray to the top. This will keep the top of the dough from drying out and hardening, preventing all that hard bullshit.
