Combine Butter and Chicken Fat for the Tastiest Namaz
When I fry a whole chicken, there are two things I care about most: skin and fat. Not only is Schmalz a great cooking oil, it’s also very good for bread, and chef Katie Button took advantage of its greatness by whipping it with butter.
Like chicken salt , chicken oil is a great way to ensure that no portion of the chicken is wasted. To make chicken butter, Chef Button combines 1/3 cup ghee (you can walk through the cooking process at the link below) with two sticks of butter, 4 teaspoons of molasses and a teaspoon of salt. Whisk the whole thing to a “fluffy cake frosting consistency” and spread over all the ingredients.
