This One-Ingredient Fruit Syrup Gets Better With Age

Mosto cotto is an aged grape syrup with subtle nuances of flavor. Not only is this Italian spice very easy to make – it literally requires one ingredient (grapes) – but much of the “work” is just waiting.

Click the link below for full instructions, but most of them are a snap. Simply squeeze the fresh grapes, strain the solids, and simmer the juice until thick and thick to a syrupy consistency. Pour into sterilized jars and let sit for as long as possible. (Food52 recommends up to 24 months, but you don’t have to wait that long.) The syrup will get better with age and will have a taste that is “pleasantly spicy, slightly tannic (like dry red wine) and resembles dried fruit.” After your cotto seasoned to your liking, drizzle over ice cream, ricotta, or season on a cheese plate (like honey).
