Alton Brown’s Secret Super Crispy Baked Chicken Wings
Perfectly crispy chicken wings can be easily obtained in a deep fat fryer or grilled , but much more difficult when you need to bake them. Unless, of course, you are familiar with the culinary genius Elton Brown’s method.
In his latest book, EveryDayCook, Brown shares his favorite method of making everyone’s favorite snack while playing: steaming the chicken wings first. The crispy skins require a lot of heat, and the wings also take quite a long time to fully cook in the oven. But working in the oven at such high temperatures for so long is not the best option. Instead, Brown recommends steaming the wings for 10 minutes first, then baking them on the cooling rack above the baking sheet for 30 minutes at 425 ° F. After 20 minutes, pull the wings out and drizzle with your favorite sauce, then let them finish off for last 10 minutes. This will keep your skin crisp while avoiding the extra fat that the deep fat fryer can add.
