Will It Be Sous Vide? Let’s Pick a Different Theme!

Hello everyone, and welcome back to yet another exciting session on theme-making forWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.

Let’s get down to business. Christmas is coming up, I’ve heard some of the geese are getting fat and honestly I’d like to cook one of these geese. Actually, I don’t know how to get a goose, but I would like to try some Christmas meat, maybe ham or rack of lamb or something. If you guys don’t want to go the meaty route, I have a few more ideas:

  • Tempered Chocolate: Because perfectly tempered chocolate is a wonderful thing.
  • Peppermint schnapps : or some other sweet alcohol.
  • Ribs: Last week someone suggested ribs. I would love to eat some ribs. (I think it’s meaty too.)
  • Tamales: A friend of mine just got back from Arizona with masa, so it seems right.
