Add an Egg to Oatmeal for a Smoother, Creamier and More Protein-Rich Breakfast
Some people love oatmeal on its own, but adding something to it – a banana, a scoop of protein powder , peanut butter, or an egg – turns it into a slightly different yet delicious meal. Here, the egg imparts a fluffy, almost buttery texture, but retains a neutral flavor to soak up the aromas of whatever you add.
When I first told our Alan Henry about adding an egg to oatmeal, he wasn’t entirely sure it would make something edible. He’s clearly wrong. The key here is to first cook the oats halfway through (in the microwave or on the stovetop). Crack the egg into another bowl, beat it and beat it with the oats that are still cooking (or stop the microwave and mix the egg before putting the oatmeal back in the nuclear bomb for another minute or so). While the egg is cooking, it is cooking. swells and gives oats a little more volume and texture. Add more liquid if desired until you get the consistency you want, but it should be thick and creamy. Plus: hey, some protein!
