Make a Super Silky, Veggie Cauliflower and Pecans Pate
“Pate” and “suitable for vegetarians” are not words you usually see next to each other, but with sautéed cauliflower and pecans, you can make a silky umami-flavored pasta that is almost as delicious as meat products.
To make a zesty treat that can be dipped in water, simply soak a couple ounces of pecans in a little water for an hour, then toss with a head of deep-fried cauliflower and a decadent blend of cream, butter, onion, garlic, brandy, etc. and soy sauce. Transfer everything to a heat-resistant container and press the plastic wrap to the surface of the pate. Place in the refrigerator until cool and serve with crackers, crudites, or toast.
