If Baking on the Go, Measure and Separate the Ingredients in Advance
Baking with friends is one of my favorite things to do during the holidays, but cooking in someone else’s house can upset me a little. Not only are other people distracting, I don’t quite trust other people’s measuring cups. Fortunately, there is an elegant solution: pre-measure ingredients in advance in your kitchen.
This tip is part of Stella Park’s brilliant guide to making real cookies, and will change my baking party game. Basically, you make your own cookie mix by whisking all the dry ingredients beforehand. When you’re ready to bake, simply pour it into a bowl, add butter, eggs, or whatever, and relax. As someone who might be a little savvy about their kitchen utensils, pre-measuring flour, sugar, and sourdough (using a scale I can trust) suppresses much of my anxiety about baking on the go. Parks notes that besides baking in someone else’s kitchen, it’s also a good plan if you’re going to bake with the kids, who might distract you from whether you’ve added salt or not.
