Three Easy Ways to Keep Your Sous Vide Packages Underwater
If you cooksous vide at all, you’ve most likely come across a stubborn food bag that just won’t sink. The vacuum sealing system practically eliminates this problem, but if you are not ready to invest in expensive equipment, Anova Culinary has some helpful tips on how to keep your bags underwater.
First, make sure you get as much air as possible. If you don’t have a vacuum system, try the “ water displacement method ” and slowly submerge the bag in a bowl or pot of water, letting the water pressure displace the air. If that doesn’t work, it might be because your food is naturally buoyant, but don’t worry, you have other options:
- Use a stand: Dish drying racks, file organizers, and lid organizers can help keep bags in place without letting them fall to the surface.
- Weigh it: a butter knife (or two) inside the bag can prevent it from wiggling, and since they’re food grade stainless steel, they won’t spoil your food. You can also attach a change bag or pie weights to the outside of the bag, which means you don’t have to fish and clean the butter knife.
- Register your steamer basket: An inverted steamer basket can not only hold your food in place by allowing water to circulate, but it can also “serve as a base for placing additional weights such as heavier ceramic bowls, plates or even just coffee mugs, water or Mason jars that you put water in. “
