Will It Be Sous Vide? Let’s Pick a Different Theme!
Greetings immersive circulator friends, and welcome back to yet another livelyWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.
The cheese burger extravaganza last week was great fun, but now we have to move on to another project. A few ideas to get you started:
- Hearts: After all, it’s Valentine’s week, and I wouldn’t mind an excuse to eat some beef heart (or chicken hearts).
- Other offal: I don’t want to make rubies, but I’d rather have liver or whatever you guys think would be fun. (Someone mentioned blood sausage, but it might take a while to find a source of fresh pig blood.) Some terrine could be a bomb.
- Pig ears: These are usually fried, but this can be a good way to break down all the collagen.
- Some Fruit: Have you guys heard the good news about Apple Pie Toast ? I think sous vide might be a good way to make a whole bunch of jam pie filling at once. Then you have a bunch of pie toppings ready to go.
As always, I am open to your wonderful and brilliant suggestions, so feel free to share your opinion in the comments. (Honestly, I love being told what to do.)
