A Guide to Eggs That Are Not Chicken

If you wrote “eggs” on your shopping list, you most likely mean those made with chicken. While chicken eggs are almost the perfect food, there are a whole world of other egg varieties out there.

Lucky Peach has collected a whole bunch of eggs from all kinds of birds, but these are three of my personal favorites:

  • Quail eggs : Quail eggs are tiny (about 1/5 the size of a chicken’s egg) and “gram for gram”, “more nutritious than chicken eggs, contain more B vitamins, iron and zinc.” They also cook very quickly, with just two minutes before the boil and three minutes before the boil, and make a delicious snack.
  • Duck Eggs : Duck eggs are prized for their very rich yolks and whites. The soft-boiled duck egg is not only great, but these proteins also make super stable meringues and cakes. Not sure what to do with the yolks? Cure them, my friends . (One thing I would not recommend doing with duck eggs is mixing them together. The result is an odd texture.)
  • Emu: I’ve never actually had an emu egg, but I’d like to try it. They are huge – just one egg weighs about the same as a dozen large chicken eggs – but surprisingly soft, with a “one-to-one ratio of protein to yolk.”
