How to Prevent Seasoned Eggs From Slipping

My family loves boiled eggs so much that we have some vintage cut plates to serve. They hold the eggs in place during transport, preventing them from slipping on the plate or on the floor. I love my own, but I understand that not everyone has a place for a dedicated egg dish.

The rimmed plate will keep the eggs from sliding off completely, but if not secured beyond that, they can circle around the service vessel and bump into each other like little bumper cars. Aside from the risk of spilling the filling, a serving platter looks best when the eggs are left in place rather than collected on one side. Fortunately, there are several workarounds for this (admittedly small) problem.

Workaround # 1: Use some fillings as glue.

On the weekend, I went to a trendy restaurant and enjoyed a good birthday meal (outdoors) with my friend (and Lifehacker alumnus) Virginia . We started with stuffed eggs, beef tartare, wedge and martini salads, and ended with a bottle of wine and steaks. The spiced eggs were delivered on a smooth piece of wood, but they stayed in place during transport.

As you can see in the photo above, the key was the extra filling : the egg halves with yolk were secured with a small spoonful of the stuffed filling, served directly on the board. When the eggs were placed on top of the filling, the bottom of the eggs was held securely in place, preventing slipping and slipping off (and providing an even tastier filling).

Workaround # 2: Put some roughage on a plate.

If you don’t have any extra filling (or just don’t want to regret it), you can add some greens. Spinach, chopped iceberg, or even a bagged minced meat mixture will grip the bottom of the eggs, preventing them from sliding off. Artfully arrange large leaves (such as radicchio) on a plate, fan them out so that the leaves curl upward, then place the eggs in the leaf cups. It doesn’t really matter what kind of roughage you use, as long as it isn’t smooth. (For example, cucumbers are not suitable.)
