Remember to Adjust the Size of the Pot and Pan When Reducing the Number of Recipes.
Most of the dishes I cook are only for two people, so I often shorten recipes so that we don’t eat the same thing all week. This is why I (and you) must also adjust the size of the pot and pan.
When you use fewer ingredients, they take up less space in the pot or pan, which often means they’ll cook faster than your recipe says. Switch to smaller cookware that better matches the quantity you are cooking. You have to apply this to both volume and width. For example, when I use the skillet for a reduced recipe, I prefer my smaller nonstick pan over the 12-inch skillet, which I would use for full-blown recipes. If you don’t have pots or pans of different sizes, change the cooking time or watch your food carefully so that it doesn’t get overcooked.
