Grilled Pineapple Wrapped in Prosciutto Is Your New Snack
When it comes to non-meat products, pineapple is my all-time favorite grill dish in the world. The caramelized, almost brulee-sugar and smoke flavor is great in a cocktail , and the charred fruit makes an excellent burger or pizza topping. (That’s right, pineapple in pizza is good; haters on the left.)
But the grilled pineapple is also half of your new favorite summer snack: the grilled pineapple wrapped in prosciutto. This perfect combination has almost all the flavors you could wish for in one bite: sweet, tangy, salty, smoky, and a little greasy – it’s all there, my friends. (If you’re a fan of prosciutto with melone , I highly recommend that you try this – dare I say “improved”? – snack at your earliest convenience.)
Aside from being the best of all beautiful worlds, they are – to borrow an expression from my father – as easy as falling off a log. Simply slice the pineapple into grillable shapes (rings and spears work well) and grill them over medium to high heat for a few minutes, long enough for a nice color, but long enough for the fruit to dry. Remove from the grill, let cool slightly and wrap in thin slices of fatty salty prosciutto. If you are around other people, place them on a platter and watch them disappear at an alarming rate. If you are not among other people, eat each spear covered with pork in quick succession so that the juice flows down your chin and in your stomach – with happiness. (If you don’t have a grill, don’t despair; you can use a grill pan or cast iron skillet.)
