How to Make Dinner for Two for Under $ 10 at Trader Joe’s
Trader Joe’s is a very unique grocery store, and while you can’t shop all at it, it has its strengths. In addition to great snacks and seasoning mixes , they have tons of items and ingredients to make a quick and tasty lunch for two on weekdays for under $ 10.
Below you will find some of my favorite simple dinners that can be prepared for much less than take away. There is pasta, pizza, salad, and even a vegan option. Keep in mind that these recipes assume you have basic ingredients like salt and pepper and maybe a little olive oil, but some of these dishes are so cheap that you can add a bottle of EVOO without spending much more. ten. Also keep in mind that these prices are based on my local trader Joe’s prices and may vary by region.
Ravioli with goat cheese and crispy pancetta
Goat cheese ravioli with dried tomatoes ($ 2.99) + Citterio Pancetta ($ 3.29) + Alla Genovese Basil Pesto ($ 2.49) = $ 8.77
Cook the pancetta in a skillet over medium to high heat until nice and crispy. Set aside to drain on paper towels. Bring the water to a boil and prepare the ravioli according to the package directions. Drain the ravioli, leaving 1/4 cup of pasta water, and transfer to a large bowl. Combine the pasta with 2-4 tablespoons of pesto (depending on which pesto you want) and pasta water to make the sauce. Transfer to plates, top with crispy pancetta and enjoy.
Cremini mushroom pizza
Fresh pizza dough ($ 1.19) + fresh pizza sauce ($ 2.49) + fresh mozzarella ($ 2.99) + cremini mushrooms ($ 1.79) = $ 8.46
Remove the dough from the refrigerator, let it come to room temperature (it usually takes about half an hour) and preheat the oven to 450 ℉. Moisten your hands and baking sheet, flip the dough onto the sheet, and stretch gently to fill the surface. Spread the pizza sauce over the dough and top with slices of fresh mozzarella and thinly sliced cremini mushrooms. Bake for 8-10 minutes, until the crust is crispy and the cheese melts and begins to bubble.
Lentil salad with tomatoes and goat cheese
Stewed Lentils ($ 3.29) + One Steak Tomato ($ 0.79) + Crumbled Goat Cheese ($ 2.49) + Green Goddess Dressing ($ 2.99) = $ 9.56
Place the lentils in a bowl and crush them with your hands. Chop the tomato, toss it into a bowl and stir in the lentils. Drizzle with Green Goddess dressing to taste, stir again and sprinkle with chopped goat cheese.
Chili Stuffed Sweet Potatoes with Fried Broccolini
Two sweet potatoes ($ 1.58) + one can of turkey and bean chili ($ 1.99) + Chunky Spicy Guacamole Autentico ($ 2.99) + Young Broccoli ($ 2.49) = $ 9.05
Preheat oven to 400 ℉ and pierce the sweet potatoes with a fork five or six times. Place them on a baking sheet and bake until tender, 50 minutes to an hour. When the potatoes have about 15 minutes left, stir the broccolini with a couple teaspoons of olive oil, season with salt and add to the baking sheet along with the potatoes. Heat the turkey chili (either veggie or beef) until hot and bubbling. When the potatoes and broccolini are done, transfer the vegetables to a plate and divide the potatoes. Pour the chili over the potatoes, sprinkle with the guac and bury.
