Use Salsa As a Sandwich Topper

You don’t need anything more than meat, cheese, and bread to make a good sandwich, but adding tomatoes, onions, or other vegetables can make it truly great by adding fresh flavor and texture. Instead of chopping up each of these ingredients separately, you can save time by adding salsa.

In fact, a very busy friend of mine (mother, bartender and law student) told me about the idea. One day, trying to make a sandwich and walk out the door, instead of chopping the tomato and onion separately, she reached for a pico de gallo. The mixture of diced tomatoes, onions, chili and cilantro goes especially well with a turkey and cheddar sandwich, roast beef and pepper (for extra heat), or even a tuna salad sandwich. Don’t like cilantro? Almost any salsa can be used, but I am partial to these flavor combinations:

  • Berry salsa with ham and brie
  • Corn salsa with chicken salad
  • Mango salsa with fried chicken
  • Black bean and avocado salsa with hummus

Just scoop it up (place it between the cheese and the meat to keep the bread from getting wet), eat it and feel really good about all the food you managed to pack into your sandwich without breaking the cutting board.
