What Are Your Favorite Pork Recipes?

Hello and welcome back toWhat’s Cooking? , an open thread where you can share your brilliant thoughts, tips, recipes and opinions on all food related matters. This week I want to talk to you about other white meats, from jerky and crispy bacon to the juiciest chops.

Pork is perhaps the most versatile meat. From one animal, you can get breakfast meat, chops, stir-fries, and meatballs. Even a delicious porchetta di testa (and later an eerie decor item ) comes out of my head. I love pork so much that by the age of 30 I roasted a whole pig . I want to hear from you the very best pork recipes, tips and tricks. As always, I have a few questions to help you get started.

  • What’s the best way to cook bacon? I like to bake mine on a rimmed baking sheet that has a pair of wire racks. It comes out perfectly crispy and flat every time.
  • What’s your secret to super juicy pork chops? How about a roast? I don’t make tons of pork roast, but sous vide pork chops are my absolute favorite. They are always very juicy and flavorful and I don’t have to worry about digesting them.
  • When it comes to breakfast sausages, do you prefer links or patties? Tricky question; The best sausage for breakfast is the sausage gravy .
  • How to make ribs? I’ve never actually made ribs, so I would love to hear your method.
  • What’s your favorite “alternative” part of the pig? Roasted pork ears are my number one pick in this category, but I also like a good trotter.
  • Have you ever cooked a whole pig? How did you do that? I split mine, rubbed it with a whole bunch or herbs and garlic, and seemed to have poured some sort of orange juice marinade into it before cooking in a La Caja China box . It was very good.
