Take in the Cheesy Crunchy Beauty of the Frico Fried Egg

My love for scrambled eggs , my love for fried cheese, and my love for eggs and cheese are all well documented, but somehow – until this fateful morning – I had never fried eggs in fried cheese. Honestly, what a dumbass.

When it comes to combining cheese and eggs, we usually think of omelets or omelets. These things are good, but nowhere near as good as a delicious sunny-sided yolk egg sitting happily on a bed of lacy, crispy, salty cheese. When I was working on yesterday’s fight , I felt like frying an egg in a pile of cheese like a ton of cheddar bricks, and I had a lot of questions. Was I the first to think about it? (No.) Am I a genius? (Also not.) Why isn’t this on the brunch menu? (Human madness.) Honestly, look at the bottom of this thing and tell me you don’t want this.

These eggs are not only delicious but also surprisingly easy to prepare. To make it yourself, you will need:

  • Egg
  • A small handful of grated hot cheddar cheese (2-3 tablespoons)

Heat a nonstick skillet over medium heat and place the cheese pile in the middle. Cook until bubbly and lacy like this:

Crack the egg right into the pile of cheese and use a rubber spatula to keep the protein from dripping off the top. Cover the skillet with a lid and cook for a few minutes, until it turns white, but the yolk remains runny. Gently slide the cheese egg off the plate with a spatula. Eat, rejoice and spread the good word.
