How to Cook a Roast With a Crown Without Twine
The holidays are a time to challenge the main courses, and nothing stops the show like a crown made entirely of meat. Most roast corona is rolled into shape with a little kitchen twine, but if you don’t have one, Alton Brown (very cleverly) suggests using a bunch pan.
This trick has some size restrictions – stick to a small pork or lamb crown – but it’s extremely elegant and you don’t have to worry about things falling apart during cooking or if you’ve tied this knot tight enough. (Plus, this is the lazier route, and I always advocate the lazier route.)
