How Nigella Lawson Fights Lousy Tomatoes

We are right in the middle of what I call “tomato season” and honestly, I got tested. They all look so good, but even cherry tomatoes – which I can usually count on will be at least a little flavorful – seem dull and dull. Fortunately, Nigella Lawson (whom I have loved and cherished since I received a copy of How to Become a Home Goddess for Christmas as a teenager) has a solution to this extremely frustrating problem.

Just as with A.A. Newton’s fried salsa , the answer is heating, only that heating is much softer and the method is much easier to use. The oven will need to be turned on, but just enough to get hot (450 ℉). Then take your disappointing blunt tomatoes, cut them in half, sprinkle with salt and sugar (and maybe a little thyme), then turn off the oven and put the tomatoes in there overnight, being careful. do not open the oven even to take a look. The mild ambient temperature gives tomatoes a new look, transforming them from weak and watery to sweet and vibrant (yet very juicy). They are great in salads, excellent with simple pasta, and very good for a sandwich.
