After you’ve peeled and rinsed your eggs — and I always rinse them to remove any tiny pieces of shells — place them one at a time on a dry paper towel. The moisture from the egg will help it stick to the towel, stabilizing the egg and preventing it from flying away. Slice gently, rub the knife against the edge of a paper towel to remove excess yolk (this will ensure your next cut is clean) and repeat until all eggs are split in half.
