Tomato Paste Store Alton Brown Way
I haven’t watched the Good Eats reboot, but Joel (from Joel’s Hot Takes ) did, and this morning he shared some very good advice from the latest episode of Hittin ‘the Sauce II :
In his new episode this week, he suggested freezing a can of tomato paste, then chopping up tablespoons as needed, and storing it in the freezer to keep it from spoiling.
If you’re buying pasta in a tube it might not be that exciting for you, but if your favorite brand is sold in a can, this is exactly the pasta paradigm shift you might be looking for. According to Joel, who, again, watched the episode but couldn’t find a video for me , you “freeze the whole can, shoot the top and bottom, pop the frozen pasta out like a jerk, and cut off what you need. … Then just leave the jar in the freezer bag and return to the freezer. ” It’s simple. It’s elegant. This is a good way to store tomato paste.
