How to use a Dutch oven as a refrigerator

I first saw this on America’s Test Kitchen’s Instagram feed, and while it’s not something you’d take to the beach, a chilled Dutch oven can really help you out in a pinch. Cool the Dutch oven first. This can be done by taking an ice bath. Fill the container with cold water and add about two cups of ice. Let the ice water cool the metal for about five minutes and then drain the water. One comment notes that you can save water and simply chill the container in the refrigerator instead. If you have time, I recommend this option because you can also properly cool the lid, but it will probably take an hour. If you’re short on time, try the ice bath method.

You have now effectively created a cool chamber or large serving bowl that will stay cold longer. Dutch ovens are prized for their heavy cast iron construction, which usually means they can retain heat and cook food evenly. What they are really good at is controlling the flow of energy, and this applies to low temperatures as well. You can serve whole potato salad directly in the Instant Pot, protect containers of dressing, or keep condiments, drinks, or deviled eggs chilled inside the Instant Pot with the lid on.

You can take a real refrigerator and fill it halfway with ice and put drinks inside, or stop somewhere in the middle and buy a steam rack to add a shelf inside. Place ice under the rack to keep the room cool and prevent the food from melting. The pan will stay cool longer than other containers such as glass or plastic, but the exact amount of time depends on the size of the pan, the temperature of what’s inside, and how often you open it.
