Make Quick and Easy Blueberry Muffins With Packaged Pancake Mix
Perhaps unsurprisingly, there’s another delicious bite that can be easily made using packaged pancake mix. This malty, self-rising baking mix makes an excellent batter for stir-frying vegetables and an ideal batter for apple fritters (among other tempting high-carb snacks ). Complete pancake mix works for both sweet and savory dishes. Let’s add one more to the list of Boxed Mix’s greatest hits: quick and easy blueberry muffins.
Most cakes and instant breads contain similar ingredients – flour, baking powder, sugar, salt, fat and eggs – just in different proportions. Some people are good at baking from scratch, and they are the ones who may consider boxed pancake mix a real baking scam. These are pre-mixed dry ingredients (and sometimes even powdered eggs), so why not make your own? To this I say: Exactly!
Complete pancake mix is already pre-measured and mixed, so all you have to do is fiddle with the proportions a little and add a little liquid to make the type of quick bread you want. There’s less time spent hauling six different containers out of the pantry, fewer measuring tools, and easier cleanup. Plus, sometimes you just run out of eggs.

Correct ratio for muffins
Muffins have a slightly higher sugar and fat content than pancakes, so other than liquid (which you still need to add), that’s all you need to add. Yes, and blueberries, of course. I don’t like my cupcakes to be as sweet as cake, but if that’s important to you, add an extra tablespoon of sugar to the mixture. Muffin batter is also much thicker than pancake batter, so keep in mind that the mixture will need to be quite thick.
How to Make Blueberry Muffins from Pancake Mix
1. Whisk pancake mix, sugar, butter and milk in a bowl. The mixture should mix well, but there may be a few lumps. Add blueberries and stir gently. You can use frozen blueberries, but they will give the batter a blue-gray tint.
2. Place the dough in a muffin tin, greased or lined with paper. I usually fill them just below the top because I like the cupcake to be crowned. To ensure a crispy crust, sprinkle the top of each cupcake generously with granulated sugar.
3. Bake the muffins in a 400°F oven for about 12 minutes or until lightly browned and springy in the center.
Feel free to add a pinch of ground cinnamon, a little vanilla extract, orange zest, or even other fruits to your pancake mix muffins. This recipe makes about five cupcakes and can certainly be doubled.
Easy Blueberry Muffins Recipe (from Pancake Mix)
Ingredients:

1 cup prepared pancake mix

2 tablespoons sugar + more for sprinkling

2 tablespoons canola oil

4 tablespoons milk (can be replaced with milk or water)

½–⅔ cup blueberries
1. Preheat oven to 400°F. Line a 6-cup muffin tin with paper liners or generously grease the pans and top rim of each cup.
2. Whisk pancake mix, sugar, butter and milk in a bowl until smooth. The mixture should mix well, but there may be a few lumps. Gently fold the blueberries into the mixture with a spoon.
3. Divide the batter among the muffin cups. Generously sprinkle the tops with more granulated sugar.
4. Bake the muffins for 12 to 15 minutes or until the tops are lightly browned and springy in the center.
