I don’t think most of the people who come up with viral cottage cheese hacks actually like cottage cheese. If they did, they would just eat it. The cottage cheese itself is already quite perfect: salty and creamy, with a wonderful milky flavor. It’s still a good hack, and one tiktoker went one step further by mixing cottage cheese with cinnamon, sugar, and a little vanilla extract, spreading it on toast, and air-frying it.

It seemed promising at first: the TikTok toast had a wrinkled, if not quite brulee, top, and I imagined it tasted like Danish cheese. I wouldn’t call it “high protein” as each slice of toast can only contain a couple of tablespoons of cottage cheese, which is only three grams of protein, or half of what you would get from one slice of cottage cheese. egg. It wasn’t good. The whipped cheese, which was juicy, creamy and tasted great before seeing heat, was quite badly spoiled during the time spent in the deep fryer. What was once smooth became grainy, destroying the whole point of whipping in the first place. The taste was also dull and the bread is quite dry (the fryer likes to dry the bread ).

Fortunately, all this is easily fixable. Instead of frying the curd in the air, I fried it in brul. (Never send a deep fryer to do the work of a kitchen burner.) I toasted the bread as usual, smeared the top with a mixture of cottage cheese, sugar, and cinnamon, then sprinkled the top with plain sugar, because there’s no point in burning the cinnamon. . I lit the kitchen burner, dimmed the flame, and in slow, sweeping motions, roasted the sugar until it bubbled and caramelized before it cooled and turned into a crunchy sugar shell.

This toast was delicious. All the flavors of the curd mixture came out without any grainy texture, and the bread was toasty but not too dry (or burnt around the edges).

Ingredients:
