This Breakfast Pancake Sandwich Is Better Than the McGriddle

Breakfast sandwich bread tends to be hearty, like English muffin, bagel, or French toast , but the standard pancake differs in both flavor and texture. It offers a gentle yet flexible composition and the added benefit of a spongy crumb. Air pockets in the frame allow the pancakes to fit snugly around the sandwich filling without breaking them. It’s like a memory foam mattress for your eggs and bacon. They deserve to be pampered too, so let’s make pancake sando for breakfast.

The benefit of using pancakes instead of bagels or store-bought English muffins is that you can control the flavor, texture, and height of the pancakes. Any pancake recipe will work, so use your favorite or even reheat boxed ones. I don’t have a ready-made recipe, but I like the ones with a tablespoon of sugar because I’m a weirdo and often eat plain pancakes. The amount of sugar is not high enough to make the pancake sweet, but it does add to the malty flavor of the dough. In this case, the slightly sweet pancake will be a nice contrast to the salty sandwich filling.

I filled my breakfast sandwich with scrambled eggs, bacon and Swiss cheese and topped it with maple syrup. Since the sandwich is quite simple, I focused more on timing. I put the bacon strips in the oven while I fry the pancakes on the stove. When the cupcakes were ready, I placed them on a cooling rack to keep them from getting wet on the bottom, and fried the eggs in the same pan. At this point, the bacon came out of the oven and I hurriedly assembled the sandwich.

My boyfriend helpfully pointed out that it was a McGriddle. However, I had a McGriddle and it was nowhere near as sublime as this one. McDonald’s has its place and its time, but its taste is black and white compared to this homemade breakfast pancake sandwich in bright color. The point is to treat yourself to a good stack of good quality salty crispy bacon and use the maple syrup you like (regardless of whether it’s real or artificial). My only regret is that I don’t soak the pancakes on both sides before assembling. Don’t worry, I managed to solve this problem by dipping the edges in creamy syrup. Try different toppings for this sandwich, like sausage, tofu, chorizo, or pickles and cheese. Whatever you stack your pancakes with, double up because you’ll be back for a second sandwich.
