Get Your Chocolate Dose With This Greek Yogurt Pudding
I don’t know if it’s hormones or Valentine’s Day propaganda to blame, but lately I’ve become a chocolate fanatic. The desire was so strong that I baked a chocolate cake. (As someone who never bakes, this indicates that the situation is extreme.) The cake topped with this two-ingredient frosting is nearly finished, which means I need a new craving mitigation strategy, preferably one that doesn’t require more baking. Food52 must have heard my silent prayer because they answered it with chocolate Greek yogurt pudding .
This dessert is chocolate pudding in the same way that chocolate frozen yogurt is ice cream. It quenches the chocolate itch, satisfies the sweet tooth, and imparts a delicious flavor that neither pudding nor ice cream has. If you tend to attach importance to your diet, eating a yogurt-based dessert can also give you a touch of self-satisfaction.
It is delicious? Yes it is. The author of the recipe describes it as “a cross between one of those YoCrunch savory vanilla yogurts with Oreo crumbs and a bag of chocolate snacks.” He is also good with modifications. The recipe calls for half a cup of full-fat Greek yogurt, as well as two tablespoons of Dutch processed cocoa powder, two tablespoons of heavy cream, a tablespoon of maple syrup, a teaspoon of vanilla, and a pinch of salt. I only had regular cocoa powder, no vanilla and forgot the salt, and still managed to make a smooth and creamy chocolate dessert. (I also added a tablespoon of powdered sugar for extra sweetness and would like to try it with some instant espresso powder.)
The recipe also calls for everything to be mixed together in a mixer with a paddle attachment, but there was no way I was going to pull out my KitchenAid for one almost pudding serving. Luckily, the immersion blender works great. Mix all the ingredients in a large bowl and insert the blender head into it, moving it slowly up and down (and scraping the sides from time to time) to make a smooth and shiny “pudding”. Serve in a cute little glass or cup with whipped cream, berries, crushed Oreos, and/or gummy worms (to make the “best for you” cup).
