This Comforting Breakfast Pasta Is Ready in 15 Minutes.

Pasta is a breakfast staple. Like toast, these are carbohydrates. It also pairs well with eggs, bacon, and cheese, three foods I love to eat in the morning. (American breakfast foods are one of the few things that make me feel vaguely patriotic.) My breakfast pasta tends to include, whether it’s a plate of carbonara or a full breakfast lasagna , and isn’t great for a busy morning at weekdays. . But this breakfast pasta from Food52 takes less than 15 minutes to make and is warm, delicious, and soothing.

It also pairs well with my obsession with mixing raw eggs with hot carbs . The Japanese dish tamago kake gohan is perhaps the most classic example of this. All you have to do is crack a raw egg (or egg yolk) over a bunch of hot rice, mix it in, and season it with soy sauce. The heat from the rice lightly fries the egg, creating a saucy, custard, soothing concoction, which is exactly what happens in this pasta recipe (except the heat is from the noodles, not the rice, obviously).

In addition to a cup of your favorite pasta and an egg, you only need a couple of tablespoons of butter to make this dish. Cook the pasta according to package directions in a saucepan of salted water, drain—under no circumstances rinse off the starch—then melt the butter in a pasta pan. Add the noodles back to the saucepan, stir in the oil, then remove the saucepan from the hot burner (simply turn it off if you have a gas stove) and crack the egg straight into the saucepan. Mix thoroughly until the egg dissolves into the buttered noodles, creating a sauce.

From there, you can finish it off with some bagel seasoning, crispy bacon bits, or a fluffy pile of grated cheese. At this point, you’re basically cooking lazy carbonara, and that’s not a bad thing.
