These 3-Ingredient Pecan Slices Are the Perfect Fun Pack.
One of my favorite Christmas treats is a three-ingredient candy called Rolo Candies. (At least that’s what my family called it.) You take a mini pretzel, place an unrolled roll on top, and then heat it up in the oven until the candy is soft. Press a pecan half into the chocolate and let it set for a delicious sweet-and-salty bite. (Some people substitute red or green M&M’s for pecans, but I think that’s a little sugary.)
This little piece inspired me to make the pecan and cheese bouquet you see above. The format is basically the same, except the pecan is moved down to become the base, the chocolate is replaced with cheese, and the whole thing is topped off with cranberries. You can also drizzle or add some honey if you want to sweeten it even more. It’s like a cheese plate in one bite and it’s delicious.
Cheese is your choice, but you can’t go wrong with brie. If you don’t like brie, choose another soft or semi-soft cheese that melts fairly easily, and avoid harder cheese like spicy cheddar, which can get greasy in the oven. Set the oven to 250℉, then place the pecan halves flat side up on a baking sheet. Place a small piece of brie on top of each pecan, then place the baking sheet in the oven for a few minutes (three is usually enough for brie) until the cheese is soft and starts to stand out a little. Remove the pan from the oven and press sweetened dried cranberries or your favorite dried fruit into the cheese. Drizzle with honey if you like. Serve immediately, but don’t worry if they cool down a bit before guests arrive. They are equally delicious at room temperature.
