The Easiest Lime Pie Has Just Three Ingredients

Sometimes, especially in the summer heat, you want the dessert to be as simple as possible. This new three-ingredient no-bake lime pie recipe released by Kirbie’s Cravings is exactly that. There are only three ingredients in the recipe: lime, sweetened condensed milk and a ready-made cracker crust. And it turns out a sweet, tart and delicious lime pie.

The original recipe calls for mixing two cans of sweetened condensed milk with 3/4 cup lime juice and one tablespoon of lime zest, which is then poured into the graham cracker crust and placed in the refrigerator. If you don’t have key limes or don’t want the extra work of squeezing a whole pack of mini limes, regular limes are fine.

If the two 14-ounce cans of condensed milk in the original recipe are too sweet for you, you can replace one of these cans with eight ounces of cream cheese, which you beat to soft peaks and fold into the mixture. lime and sweetened condensed milk. When I made this version, I found that the pie filling was a bit bland and I ended up shoving the leftover pie in the freezer. But this is definitely a pie that I will make again in the future.

This lime pie can be easily made vegan.

After testing the original recipe, I wondered if it could be modified to make a vegan version using sweetened condensed coconut milk. As it turns out, as long as you put the pie in the freezer, the answer is yes: you can make a vegan lime pie with a soft-serve-like cream filling. I was expecting a strong coconut flavor, but that was just a hint and the lime flavor took center stage. (You will need to freeze the pie and eat it frozen, as putting it in the refrigerator makes for a filling that just won’t set.)

You’ll need:

  • 4 7oz cans sweetened condensed coconut milk
  • 1 tablespoon lime zest
  • ¾ cup freshly squeezed lime juice
  • Finished graham cracker crust

How to make vegan lime pie

  1. Mix lime juice and lime zest with sweetened condensed coconut milk. Stir until smooth.
  2. Pour the mixture over the graham cracker pie crust.
  3. Place in the freezer until the mixture has frozen to a soft ice cream-like consistency.
  4. Serve frozen. If desired, garnish with whipped cream and extra lime zest.
