Sprinkle Pancakes With Irish Cream
I have never researched 23andMe (or any similar genetic test) because I am not particularly interested in the results. I am white. I’m from Mississippi. No good or noble fruit can be found on this particular tree.
I know that I am a little Irish. When I got married, I wore some Irish earrings that my Irish great-great-grandmother wore to her Irish wedding in Ireland before she moved to America. I’m also a little Welsh, but we don’t have a day where the Welsh go overboard and drink to celebrate in the United States, so some white people tend to exaggerate their connection to the Emerald Isle just so they can feel something in St. Louis. , Patrick’s Day. That’s what I’m doing with these Irish cream pancakes – feigning enthusiasm for a day that I don’t have the emotional connection to feel. Luckily the pancakes are good and very easy to make: take a box of pancake mix and replace the water or milk indicated on the instructions with the same amount of Irish cream. I used a grocery store brand that wasn’t as alcoholic as the real Bailey’s, but which retained an unmistakable hint of ethanol.
Irish cream pancakes are slightly sweet, slightly intoxicating, and hard to put down. While they work well with store-bought Irish cream, they are even better with homemade products , which are also easy enough to make in the comfort of your own kitchen. (If you want to make it even sweeter/sweeter, add some chocolate chips to the batter right before flipping the pancake.)
Once you’ve purchased or made your favorite cream (I’ve heard they even make almond milk versions now), mix the batter according to the directions on the box, replacing all (or part) of the milk or water with Irish cream. Don’t overmix – lumpy batter makes fluffy pancakes – and fry in oil for best results.
If you’re worried that the booze will be too harsh in the morning, experiment by substituting only half the liquid in your recipe for Irish cream, then adjust as needed. Increasing the amount of Irish cream will also increase the sugar content, so set the heat a little lower than normal so your pancakes don’t burn before they’re fully cooked inside. Serve with maple butter, Irish cream flavored whipped cream, or rum ham .
