Here’s When to Add Blueberries to Pancakes
Blueberries are a popular topping for pancakes. It’s a very healthy breakfast fruit – there’s literally a cereal called “Blueberry Morning” – and it adds a nice touch of color to a beige dish. Besides, they are simply delicious. They are sweet and slightly sour, the perfect counter to sweet, buttery pancakes. But making blueberry pancakes isn’t as easy as tossing a handful of fruit into a bowl of batter.
When not to add blueberries to pancakes
Frozen berries hold their shape better than fresh ones, and if you start with fruits at a cooler temperature, they are less likely to overcook. When you have berries, you need to add them at the right moment. If you add them to a bowl of raw dough, they can burst and color the entire pancake. And, even if they go through the stirring part of the recipe, a hot pan can cause them to rupture on contact. To add blueberries to pancakes and keep them (mostly) intact, you need to give them a soft base to sit on.
When to Add Blueberries to Pancakes
Start by laying out the circles of dough on the skillet or skillet as you would any pancake. Wait until you start noticing bubbles, which indicate that a nice crust has formed on the bottom of your pancake. Gently place as many berries as you like on top of the batter, leaving a small space between each berry so that the pancake cooks well. Turn the pancake over and resist the urge to press down on it with a spatula.
Let it cook for another minute or two, and then arrange on a plate with bacon, syrup, butter, and/or whatever you would normally have with pancakes. Enjoy your perfect blueberries inside your perfect pancakes.
