Peanut Butter and Pumpkin Will Be Your New Favorite Autumn Sandwich
As our colleagues at Takeout point out, we each have a weird peanut butter sandwich . For my mother, that meant packing a peanut butter and pickled cucumber sandwich for lunch every single day in her twenty-year career as a public school teacher. And, as she often noted, she never had to worry about someone stealing her lunch.
For others, it could be a peanut butter and bacon sandwich , a peanut butter and marshmallow fluff sandwich, a peanut butter and butter sandwich , a peanut butter and chips sandwich, or even a peanut butter and sriracha sandwich .
Peanut butter can be paired with any number of flavor combinations – sweet, savory, tangy, or spicy … it all works for someone. Whatever you love the most, this peanut butter sandwich is for you. So, in the spirit of autumn, can we humbly suggest trying the peanut butter and pumpkin sandwich?
I recently came across this recipe during one of those random internet searches that are known to get a little weird. The original recipe I found required mixing equal parts peanut butter and canned pumpkin . When I tried it, this particular combination was definitely not my sandwich as it tasted exactly the same as expected from mixing boiled pumpkin with peanut butter.
However, what I have found is that when you add some spice to a little honey and a dash of pumpkin pie, this sandwich actually becomes good. Really good. The honey softens the pumpkin and the spice adds a bit of flavor, all of which go well with the peanut butter flavor. The result is a thick, creamy mixture with just the right amount of pumpkin.
I personally recommend adding a few slices of banana, but that’s my personal preference as the pumpkin peanut butter filling is good enough on its own. If you do add bananas, you can reduce the amount of honey by half to correct the sweetness of the banana.
Peanut Butter Pumpkin Sandwiches
Ingredients
- 2 tablespoons of natural peanut butter
- 2 tablespoons canned pumpkin
- 1 tablespoon honey
- 1/2 teaspoon pumpkin pie spice
- chopped banana (optional)
- four slices of bread (preferably toasted)
instructions
Mix equal parts natural butter peanut butter and pumpkin puree, then add the honey and pumpkin pie spice. That’s enough for two sandwiches. Spoon the mixture over two slices of bread, add the banana slices if desired, and then add the remaining slices of bread.
