This Parfait Cake Is the Perfect Last Minute Dessert on July 4th
It’s not really a secret that I’m not particularly proud of being American, but I’m writing about cooking, living in the United States, which means certain editorial decisions are influenced by certain American holidays. (This is capitalism, baby.) This Sunday is Independence Day, a day that is often celebrated by consuming “flag cakes” among other red, white and blue desserts.
I’m not going to turn on the oven on July 4th, but even my hardened heart is a little captivated by the themed dessert, and it just so happens that two of my favorite fruits – blueberries and cherries – match the festive color scheme. Add some white whipping cream and you have a spread flag dessert, if not a full flag cake.
The format for this treat is simple: Place the whipped cream and blueberry cherry pie slices in a pretty glass, then spoon it down. You can also use blueberry pie and fresh cherries if you want to change it up a bit. Use a store-bought pie; homemade cake is too precious to be crumbled.
The whipped cream can be freshly whipped or from a canister, or you can dive into the American theme and grab a Cool Whip. Want to use cherry pie filling and cookies instead of a whole pie? Go ahead, continue! This dessert should be light and light – perfect for people who have forgotten we have a long weekend ahead (me), or people who hate baked goods (me too).
