Make Yourself a Quick Spanish Tortilla
Spanish tortillas – aka eggs stuffed with potatoes and other things – are easy to make, especially if you’re cheating and using potato chips, but it takes a long time. They take about half an hour to assemble and cook, and are usually quite large. This isn’t great news if you’re a lonely person with limited time and a craving for eggs and potatoes. Luckily, you can use the waffle iron to make one Spanish potato chip tortilla in minutes (about seven minutes to be more precise).
All you have to do is take a couple of eggs, beat them with a little salt, then add a handful (about a cup) of thin (Lay’s style) potato chips and a couple of slices of prosciutto (or other thin ham) to the bowl. Let it brew for about five minutes, until the shavings become soft. Pour the mixture into a waffle iron, cover for just a minute and transfer the omelet to a plate. (By the way, this is not the only “omelet” that can be prepared this way – waffles can be made with almost any combination of eggs and other things.)
You can eat your Spanish tortilla while it is hot, but it is traditionally cut into small pieces and served at room temperature – tapas style. I like mine with sour cream and garlic. To make it you will need:
- 2 eggs
- A pinch of salt
- A pair of ground pepper
- 1 large handful of Lay’s potato chips (about a cup)
- 1-2 slices of prosciutto
- Any other add-ons you like, but be mindful of the size of your waffle iron (mine can’t hold more than the above).
Whisk eggs, salt and pepper in a medium bowl. Add the chips and prosciutto and gently crush the chips, crushing them just enough to sink completely into the egg. Wait five minutes, spray a little cooking spray on the waffle iron, and turn it on at medium.
Once the waffle iron is hot, gently pour the egg mixture onto the bottom wire rack as evenly as possible, remembering that the egg will expand as it cooks. Close the waffle iron for just a minute – it will cook very quickly – and remove the eggs as soon as they set. (Note that the Belgian waffle iron will take a little longer.) Allow the omelet to warm to room temperature, cut into slices, and serve with sour cream and garlic.
