Give Liqueurs a Tropical Vibe With Whipped Pineapple Juice

I don’t consider herbal syrup liqueurs “summer”, but that doesn’t stop me from drinking them in the summer or looking for new and interesting ways to drink them. If you’ve had Garibaldi, you know these bitter thick elixirs can be refreshing – you just need to add some fluffy juice.

I don’t know why it didn’t occur to me personally, but as PUNCH points out in his article on the subject , the “Garibaldi format” works with just about any herbal liqueur or liqueur combination. Just whisk in about four ounces of juice, then pour over a couple of glasses of chilled liquor and you’re done.

I’ve found that orange juice produces the most impressive and stable lather, but the combination of three ounces of pineapple and one ounce of lime juice is treacherous. When paired with 55% ABV, the liqueur takes on the simplest, friendliest punch flavor profile you’ll ever find – and I’ve poured two full ounces into my lowball.

Basically, adding an aerated aliquot of lime pineapple juice makes any heavy herbal liqueur taste happy and sunny. It’s also easy to do: simply pour two ounces of your favorite liqueur – be it Campari, Aperol, Chartreuse or any other – into a glass of ice, then whisk four ounces of (chilled) juice in a powerful blender. within 30 seconds. (If your juice isn’t chilled, you can add one or two ice cubes and beat until the cube disappears.) Put the juice over the liquor and sip, baby, sip.

The juice is of your choice, so play around with citrus and tropical offerings until you find your favorite, and don’t be afraid to combine different types of juices (or different types of liquors, for that matter). But I highly recommend that you start with pineapple and lime. This is the very definition of “dangerously tasty”.
