Whole Crab Cakes Can Be Made in a Waffle Iron
Crab cake initially doesn’t seem like a good candidate for a waffle. In the end, good is respect for the tender nature of (expensive) crab meat. If you’ve taken the time to buy a pound of said meat to make crab tortillas, this is not the cooking method you want; However, if you happen to see ready-made crab cakes in your seafood section, then waffles are a great option.
You see, many store-made crab cakes contain a lot besides crab, mostly binders, making them more “crab-flavored cakes” than real crab cakes with great chunks of large crab meat. They are allright. I’ll eat them and won’t complain, but they don’t satisfy true crab cake cravings.
But this is one of those cases where mediocrity can be turned into strength (which I practice). The $ 5 Crab Pie is not a precious item and you shouldn’t hesitate to crush it between bowls of hot waffle iron, turning it into a seafood transport platform with the freshest peaks and valleys. It’s a nice appetizer, but can you think of it as a base for Benedict? The world may not be ready.
Unlike most of my other sons with waffles, this one requires a slightly lower cooking temperature to avoid scalding the outside. Many cooked crab cakes are coated with a healthy breading or crumb that can brown quickly. Set the iron to medium heat, break the cake between the plates and check it every couple of minutes until it is browned and can be removed from the iron in one piece (use chopsticks to remove it from the grooves). Serve with lemon, lemon dipping sauce, or cook the best brunch on top of it.
