Best Egg Mogul With Tequila

Perhaps the most annoying reaction to “I don’t like this” is “You would like mine, ” but this is what Jeffrey Morgenthaler told me when I told him that I hated eggnog. More annoying? He was right. Jeff’s Claw is the only good drink and it’s made from tequila .

To fully appreciate the praise I give Jeff, you need to understand how much I hate every other eggnog. The viscosity of the coating in my mouth and the overpowering sweetness have always made me gag – drink or not drink. In my opinion, there was always a feeling of cheap melted ice cream in my mouth, slightly frozen. I don’t even like egg drink flavored dishes. Once, as a teenager, I ordered an eggnog latte trying to be seasonal. I took a sip and cried. (I was already having a really bad day, but spending five dollars on a seasonal latte when I knew I hated eggnog really drove me to the extreme.)

But this nail is not like that. This drink is light, perfectly sweetened and slightly refreshing, which I found impossible with dairy and egg based drinks. Rather than starting with a thick cooked custard, it cooks entirely in a blender (or mixer) and requires no cooking. This can also be done in advance. As Jeff explained to me in an email, “The day ahead is perfect, better tomorrow. It will last almost forever, but despite what you read on the Internet, eggnog, aged for a year or two, isn’t necessarily better. There’s a sweet spot there, and the longer it lasts … it’s like diminishing returns. My darling – a week ahead of time. “

Why tequila? According to thishelpful instructional video , tequila is essentially an “agave brandy,” and a combination of brandy and sherry is commonly found in all kinds of nog recipes. But Tequila Noga was originally meant to be part of a whole series of appetizers, Jeff says: “When I moved to Portland from Eugene’s campus, I had been making my brandy and spiced rum eggnog for years. … But I hesitated because Portland was so cool and I felt people would want something spicier. My original plan was to cook eggnog every week with all these different flavor combinations. I had sketches of Manhattan eggnog with rye and Spanish vermouth, Cynar eggnog, etc. one to the other. “

Aside from the ingredients listed below, all you need to make soda water is a blender or stand mixer. If you have a high power blender, make sure it is set to the lowest setting, as these appliances tend to heat things up, which can lead to scrambled eggs if you’re not careful.

Añejo Tequila and Amontillado Sherry Egg Nog (about one gallon or 32 servings)

  • 12 large eggs
  • 18 oz (by volume) or 450 grams (by weight) superfine or baking sugar (NOT powdered!)
  • 12 ounce anejo tequila
  • 15 ounces Amontillado sherry
  • 36 oz whole milk
  • 24 ounces heavy cream
  • Fresh nutmeg, for garnish

Add eggs to an open or stand mixer and beat over low heat until smooth. Add sugar slowly until it mixes and dissolves. Slowly add the sherry, tequila, milk and cream, making sure to add the cream last so that they don’t whip. Refrigerate overnight and serve in small chilled cups. (Punch cups are ideal and delicious.) Rub fresh nutmeg on top just before serving.
