Pile up the Leftovers From Thanksgiving on the Nacho
It’s Monday after Thanksgiving, which means you’re probably tired of leftover food, but not quite ready to go back to eating normal just yet. The solution, my friends, is nachos .
Thanksgiving nacho tackles all kinds of late-stage leftover problems. The textured contrast you get from crispy chips suddenly makes these soft, bland foods seem a lot more addictive, especially if you’ve eaten them for a couple of days in a row. Since nacho works best with a moderate amount of filling, you can finally take care of the accidental waste left over from other leftover mixes you’ve been making since Friday. But most importantly, it is a delightful pleasure; the perfect consolation prize for getting through your first day of work after a long weekend.
All you need to turn even the saddest remnants of Thanksgiving into a delicious treat is a bag of chips – any kind and every taste – and a can of condensed milk for the cheese sauce . If you accidentally bought condensed milk this year instead of condensed milk for your pie, now is your moment to shine. If not, take some on your way home.
Preheat oven to 425ºF and place lots of chips on a baking sheet or cast iron skillet. Then make the cheese sauce: Chop or chop 4-6 ounces of cheese and mix with 2 teaspoons of cornstarch in a medium saucepan. Add half a can of condensed milk and bring to a boil over medium heat, stirring constantly. If the sauce looks too thick, dilute it with extra milk. Top with leftover fresh herbs (if you have any) and something pickled or sour, such as cranberry sauce. These residues will disappear before you notice it.
