Give Each Guest Their Own Head of Roasted Garlic for Thanksgiving.
There are several ingredients in a Thanksgiving meal that cannot be improved with a clove or five fried garlic. While this is not part of the usual sage / rosemary / thyme flavor, there’s no way you can tell me that it’s not welcome (unless you’re a liar). You can crush fried garlic in potatoes, spread it on buns, and spread on turkey. You can chop the cloves and add them to the gravy. There are a lot of options.
But nobody wants to share a head of garlic, not really. While Thanksgiving should be an expression of gratitude for what you have , you should allow your guest to be a little selfish and give each of them a whole roasted head of garlic for them and for them alone. Just count the number of guests – include the kids because they’ll want to imitate the adults – then buy that many heads of garlic, plus two more in case something goes wrong (one falls to the floor, a street boy runs off with one, you don’t understand well in mathematics).
Remove any excess paper from the heads, cut about half an inch from each head to expose the cloves (save trimmings for the stock), and place the garlic on a large sheet of aluminum. Drizzle them all with olive oil and wrap tightly. Fry the delicious package at 400 ℉ for at least an hour, until the cloves are soft, sticky and golden brown. Place one on each plate and watch your guests’ faces light up with sheer pleasure in the gift you presented them – the gift of scent.
