Beat the Cottage Cheese Even Better
I love curd with all my heart, but it doesn’t have the sexiest reputation and this can be a problem for those with texture issues. But salty, creamy, savory dairy products will appeal to even the pickiest dairy lovers – you just need to whip them first.
This idea – which I originally saw in The Kitchn – is brilliant. It eliminates all curd and whey by mixing them into one juicy, creamy paste. All you have to do is stir a cup of full-fat cottage cheese in a food processor for a minute. If you really want to take your cheese to a luxurious place, drizzle with a little olive oil to help remove the cheese’s inherent squeakiness and make it smoother.
Spread on your favorite piece of bread – or brown patty – and sprinkle with jam, fresh fruit, chopped tomatoes, or puff of salt and pepper. It also makes a very good sauce (high in protein) for chips, vegetables or a spoon. In fact, when eaten straight from the bowl, it almost looks like unsweetened yogurt, except that it is cheese and cheese is never unwanted.
