You Can Use Mayonnaise to Fry the Steak.
I am a North Mississippi grower and as such, I am a huge fan of the white emulsion known as mayonnaise. Not only is it indispensable for sandwiches, but it can also make terrific mashed potatoes , super wet chocolate brownies and, as I just recently found out, great fried steak.
Alton Brown may have written about mayonnaise steak last year, but it has only recently come to my attention; I’m alarmed I missed it the first time because the mayonnaise steak is my shit. Putting aside any mayonnaise phobia you work with and thinking about what ‘s actually in mayonnaise (lots of oil, some eggs, sugar, and seasonings), it makes sense as a scalding agent. Sugar and protein help in darkening, and oil acts like butter. When I tasted it on a Denver steak on Friday night, I found it creates a great crust in minutes and doesn’t give, I promise you, even a little mayonnaise flavor.
If you are fancying a piece of beef soaked in mayonnaise, know that you will need very little. Just as you treat your skillet with a thin layer of neutral oil, you are treating your steak with a thin – almost translucent – layer of seasoning. Just dip a baking brush in mayonnaise, paint on both sides, then season as usual. Fry in a hot, untreated skillet (you see, because the steak is cooked) and cook until cooked to the desired degree of doneness. Admire the crust of the mayonnaise, eat the steak, and repeat as needed (maybe try with salmon ).
