Drink Your Thirst With This Rum Cocktail
Last weekend, Sunday lived up to its name and I was able to enjoy a few cocktails at a sunny cocktail bar in southeast Portland. I started off with coconut gin negroni, and as I sipped on it, a sassy little Squirt (one of my favorite sodas when I was young) caught my eye.
It was called “Sting Wray” and was made with extra strong rum, lime juice and healthy citrus soda. I was obviously inspired to make it myself because I would use any excuse to buy nostalgic drinks, but I also wanted to see if the cocktail would work just as well with regular strength rum. Oddly enough, no one could have foreseen the approach, but it was so.
This sparkling, bright drink is so drinkable that I almost absentmindedly drank it right before meeting on an empty stomach, so amazed by its citrus sweetness. I love a lot of lime (3/4 ounce), but feel free to cut it down to half an ounce if you’re not that acidic fanatic. To make it you will need:
- 1 1/2 ounce light rum
- 1/2 to 3/4 oz. Lime juice
- Squirt (Mexican version with real sugar if you find it)
Combine rum and lime juice in an ice shaker and shake to cool. Strain into lowball, cover with crushed (or regular) ice and top with Squirt. Garnish with a slice of lime or a strip of zest and try not to eat.
