Prepare Mulled Wine in an Instant Saucepan
Hot alcohol is not my favorite, but I will make an exception for mulled wine. In fact, if trying to spice up some seasonal fun by making mulled wine in 90-degree Florida weather is in December! – taught me anything, it is that I will make many exceptions for mulled wine.
It’s easy to cook on the stove, but you know how much I hate paying attention, and I’d rather cook and forget than look at a cauldron boiling. While the Instant Pot is not suitable for making spirits – it will catch on fire – the wine is low enough for you to use a pressure cooker to season it with warm winter spices. The Instant Pot Mulled Wine is also the fastest pressure cooker recipe I’ve ever come up with: you literally set the cooking time to zero minutes. By the time the pressure rises in the Instant Pot, the wine will be sufficiently infused.
In addition to wine and spices, apple and orange juice are involved, as well as sweet and spicy cardamaro, which is added after pressure cooking, because, again, liquor in an instant solution is dangerous to your health. To make it yourself, you will need:
- 1 750ml bottle or red wine (I like a cheap blend because why heat and flavor an expensive bottle of wine?)
- 2 cups apple juice
- 1 orange without peel and squeezed juice
- 2 cinnamon sticks
- 4 cloves
- 1 pod of star anise
- 1 green cardamom pod, lightly minced
- 1 cup cardamaro
- 2 tablespoons honey
Add wine and apple juice to an instant saucepan and remove the zest from the orange with a knife, being careful to remove as little of the white core as possible. Poke the clove through a few strips of zest, then add the whole zest to the pot along with the juice of the same orange. Add star anise and cardamom and seal. Press the Manual or Pressure Cooking button and use the + and – buttons to set the time to zero minutes. After the cooking time has elapsed, press Cancel and allow the pressure to naturally release for 10 minutes, then manually release the remaining pressure. Press the Keep Warm button, which is also the Cancel button, add liqueur and honey and serve in pretty mugs to friends, garnished with cinnamon sticks (which would be quite expensive), citrus zest stripes. , or freshly grated nutmeg.
