Make Mediocre Apples Great Taste With Salt

You can buy decent apples right now, but sometimes even the most beautiful, promising crunchy fall fruit can be too tart or too soft. This is no doubt very frustrating, but don’t let it ruin your day. All you need is some salt.

Apples and salt were my standard snack as a child. My grandmother used to take super acidic, monochromatic Granny Smiths, cut them into slices, and sprinkle them with plain table salt (she also added salt to the melon) for a little more volume and flavor. Now I know that salt doesn’t just make things salty; it suppresses the bitter taste and enhances the sweetness , but then I just knew I loved those salty apples. I use seasonings a little more wisely these days – and choose the quirky Maldon – and save salt for dull fruits that need a little help in the flavor department (including the crazy tart grannies).
